Pesto Spinach Quesadilla

I crave ooey, gooey cheese after climbing. In fact, I crave ooey gooey cheese at most times in life, but a pesto and brie quesadilla makes an excellent post-climb snack! The protein-filled cheese combined with the carbs in the spinach and tortilla helps tired muscles recover. Since pesto is basically heaven in a jar, adding pesto to the tortilla makes it a heavenly quesadilla! Best of all, this snack takes five minutes tops to prepare.


1 tortilla
1 tsp pesto
A few thin slices of brie cheese
A small handful of spinach leaves


Place thinly sliced brie cheese on one side of a tortilla. Spread a layer of pesto on the other side of the tortilla. Place spinach leaves on top of the pesto. Grill the open tortilla on a griddle or in a pan for a minute. Fold the tortilla in half and grill on both sides for thirty seconds. Firmly press the tortilla to spread the melted cheese. Enjoy!
